According to the symbolism in Eastern Christianity, the deceased should face the 'light' or east, where the sun rises, and away from the darkness (west, where the sun sets). And the headstones or grave markers, that would more accurately be called foot stones, are usually placed at the foot of the grave, not the head, so the deceased faces the stone and the east, and the grave stones actually face west.
